My Go-To Cookie Recipe, Valentine-ified

disclaimer: if you’re one of those people who doesn’t like valentine’s day, you’re gonna want to exit out of this browser window right now and maybe stay away from the blog for the next, oh, 2 weeks.

because to me, valentine’s day is EVERYTHING. say…top ten favorite holidays. i just love love. i love talking about love. and singing about love. and eating chocolate. and the color pink.

a holiday that centers on all of the above feels pretty spot-on.

that said, i didn’t actually start making these cookies because of valentine’s day. this is one of my year-round go-to recipes because it’s impossibly easy, it’s small-batch and (almost) one-bowl, and it results in the perfect, ultra-chewy, brown-sugary cookie of my dreams.

(it’s also very possible that i could have conveyed that same information without eighty-four em-dashes, but, here we are.)

for valentine’s day, though, i’ve added valentine’s m&ms into the mix — an idea i picked up from one of my favorite food blogs, dessert for two, which is a genius site featuring recipes for two people. christina lane (the blogger behind said blog!) also suggests chopping up your m&ms before adding them to your cookies, and i just love that simple idea. i’m not sure why, but it just makes a big difference in terms of the texture of the final product. and it’s fun to see the chocolate parts of the m&ms floating around in there alongside all that pink.

it’s also why i’m calling these “crush on you cookies.” CUTE, RIGHT?! because you crush up the m&ms!!! and also because valentine’s day. duh.

anyway, enough cookie philosophizing. let’s get to the recipe, shall we?

oh! and of course, i’d love to know how you guys are celebrating the holiday -- leave a comment letting me know. my boyfriend jordan and i are celebrating on the tuesday before the actual holiday because we’ll be heading up to yale university on the 14th for a few events…and the details of our date are still a mystery to me because he’s handling the planning.. meanwhile, my gift for him is a total secret. so i suppose i don’t have very much to offer you in the way of valentine’s gossip. ah, well.

small batch “crush on you” cookies

makes 6-8 cookies
recipe adapted from
dessert for two

what you’ll need

  • 6 tablespoons unsalted butter, softened

  • 1/4 cup light brown sugar, packed

  • 3 tablespoons granulated sugar

  • 1 large egg yolk

  • 3/4 teaspoon vanilla

  • 1/2 cup + 2 tablespoons flour

  • 1/4 teaspoon salt

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon baking powder

  • 1/2 cup chopped M&Ms candies, plus another handful for “garnishing” the cookies once they’ve finished baking

what you’ll do

  1. preheat the oven to 375° F; line a small cookie sheet with parchment paper.

  2. in a medium bowl, cream the butter, brown sugar, and granulated sugar together. beat well, about 45 seconds. add the egg yolk and vanilla and beat until combined.

  3. in a small bowl, whisk together remaining ingredients (except m&ms) and add in 2 batches to the creamed butter, beating just to combine.

  4. stir in the chopped m&ms. make 12 dough balls (roll them in your hand), space them evenly on the cookie sheet, and bake for 7-8 minutes or until golden-brown and flattened slightly. for me, at this point in the baking process, i often need to open the oven and use the back of a spoon to gently press the cookies down and continue flattening them “manually.” after i do that, i continue baking them for 2-3 minutes for a total of around 10 minutes.

  5. remove from oven, and let them cool for 2 minutes on the baking sheet before moving them to a wire rack to cool completely.
