for once in my life, i’m going to keep this short, because valentine’s day is in approximately 12 hours. twelve. hours.

MAYDAY.

and whether you’re going it alone or headed out for a fancy date night on the town, odds are you’re looking for a little something extra to sweeten the deal.

(let it be known that i’m making this assumption about you, a complete and total stranger, based off the fact that you are currently reading a blog post about pink chocolate-covered strawberries.)

(if that is not, in fact, the case, and you don’t want to sweeten any deals at this time...then i suggest you keep scrolling for the pretty pictures and promptly get outta here.)

OKAY. let’s get to the chocolate-covered magic, shall we? i initially made these ombre strawberries for my boyfriend on valentine’s day morning because i am a total cheeseball and i really have nothing else to say for myself. they were impossibly easy, photographed beautifully (always important!) and what’s more...like all of the best things in the world...they’re pink.

did i mention that all you’ll need to make these beauties are strawberries, red food coloring, and white chocolate chips!? people!! that’s just THREE ingredients! one of which is arguably GOOD for you! in some CONTEXTS! but whose goodness is likely NEGATED by the presence of the other TWO!

pink ombre chocolate-covered strawberries

makes about 20-25 strawberries

what you’ll need:

  • parchment paper

  • 1 lb. strawberries

  • 1 1/2 cups white chocolate chips

  • red food coloring

what you’ll do:

  1. wash and thoroughly dry strawberries. line a medium-sized baking sheet with parchment paper and set aside.

  2. pour chocolate chips into a microwave-safe bowl and microwave on high for 1-2 minutes, pausing microwave and stirring with a spoon every 30 seconds.

  3. working very quickly (the chocolate may reharden and unfortunately, you won’t be able to re-microwave it once it does!), dip 1/4 of the strawberries into the melted chocolate one by one, tapping off any excess chocolate on the side of the bowl. place each onto the parchment paper.

  4. continuing to work quickly, add 3-4 drops food coloring to the bowl of melted chocolate and stir to combine. dip 1/3 of the remaining strawberries into the light pink chocolate, one by one, and place on the parchment-lined baking sheet to set.

  5. add a few more drops of food coloring to the same bowl, mix, and repeat dipping pattern with 1/2 the remaining strawberries.

  6. add a final few drops of food coloring to the same bowl, mix, and repeat dipping pattern.

  7. allow strawberries to set, unrefrigerated, for about 10 minutes or until the chocolate is hardened; serve and enjoy as soon as possible! (if you’re not serving them immediately, be sure to store them in the refrigerator.)
